I absolutely love potatoes of any form and typically roasted potatoes are on my dinner rotation at least a few times a month if not more! However, when summer comes around, I don't like to turn on my oven unless I have to. That's where these Old Bay Grilled Potatoes come in! They get such a great flavor from the grill, and you can easily throw on a protein and a veggie at the same time to make a complete meal. All the details, as well as prep, tip, and leftover notes below as always!
Prep:
-I find potatoes are the one thing that should not be prepped in advance. Once you cut into the potatoes the air will turn the russet/yellow potatoes brown, and I find if they sit out too long they never get crispy. You also really don't want to mix them with any oil or anything in advance as again they will get mushy not crispy. So bottom line is, don't prep these in advance and instead just cut right before you are going to cook! They only take about 5-10 minutes to prepare anyway.
Tips:
-You could use russet, yellow, sweet, Japanese sweet, or yukon golds here!
-If you wanted to amp up the spice, add some cayenne to the mix
Leftovers:
-Potatoes are best reheated in an air fryer. If you don't have one, reheat in the oven at 375 until hot and crispy
The recipe:
Old Bay Grilled Potatoes
Prep time: 5-10 minutes
Cook time: 30 minutes
Serves: 2-3 people
For the potatoes
1 large sweet potato
1 large russet potato
3 tablespoons of Old Bay seasoning
1 tablespoon of olive oil
1/2 tablespoon of salt
2 sheets of tinfoil
Instructions:
Cut the potatoes into wedges and mix with the oil and 2 tablespoons of the Old Bay seasoning
Preheat your grill to 400 degrees
Grill potatoes for at least 15 minutes per side or until deeply golden brown (cook time will depend on how large you cut the wedges. Smaller wedges = less cook time, large wedges = more cook time)
Remove potatoes from grill and top with the remaining Old Bay
Serve and enjoy!
