Grilling Salmon is one of my favorite ways to make it as it's so easy and the skin gets super crispy! This Chipotle Grilled Salmon is smoky, spicy, and a bit sweet thanks to the hot honey drizzle. Super easy to throw together for a weeknight meal- would be great served with veggies, on a salad, or even in some tacos. Details below!
Prep:
-I like to let this marinate for a while so the mayo has a chance to really make the salmon juicy
Tips:
-I've also added some harissa paste to up the spice level and flavor and it's great with that added
-If you don't like spice, you could do regular honey instead of the hot honey
-If you can't find the chipotle mayo sub 3 tablespoons regular mayo and add 1 tablespoon of chipotle powder or canned chipotles
Leftovers:
-Store any leftovers in an air tight container for 1-2 days. To reheat, I would suggest an air fryer or in a pan on medium heat on the stove until warmed through

Chipotle Grilled Salmon
Prep time: 5 minutes
Cook time: 8-10 minutes
Serves: 2
For the Salmon
2 salmon filets
3 tablespoons chipotle mayo
1/4 cup herbs of your choice (I like parsley or cilantro)
1 tablespoon garlic salt
1 tablespoon hot honey
Instructions:
In a food processor combine the mayo, herbs, and garlic salt and pulse until well combined
Pat your salmon dry and pour over the marinade for at least 30 minutes and up to 8 hours. I also like to add some hot honey to the top here while marinating
When you are ready to grill, preheat your grill to 400 degrees
Place your salmon on the grill skin side touching the grill, and drizzle with some hot honey
Cook for 6-8 minutes (do not flip) or until the internal temperature has reached 145 F
Top with some extra herbs
Serve and enjoy!
